Provecho is the compliment restaurant to Mitsuharu Tsumura’s first restaurant called Maido. While Maido is based in Peru and draws inspiration from Japan, Provecho draws inspiration from Peru. This restaurant provides Tsumura with the opportunity to share and further explore the fusion between Peruvian ingredients and Japanese cooking techniques.
